Have you tried using our Outlook plugin (Windows only)? You can add emails as tasks in the Plug-in and then you can just sync the updated info to your iPhone or iPad. Though the task itself will be available in your iPhone or iPad, the email itself will be not.
You can also email tasks directly to your Todoist account and those tasks should be available everywhere.

I undersantd sounds quite complicated when youa reg oing through your emails.
Anyway on the app for iphone, if I go on a task, I am afraid there is no gear icon.
