Can you update by an extra field "Status" which reflects say
- To Start
- In Progress - with additional field saying 10%, 25%, 50%, 75% which then reverts to complete?

This is already possible on Todoist with labels. You can use a @pending , @start or @in_progress label to mark a task's status (you could also define @progress_25 or @progress_50) and search for all tasks with this status.

However that is a "work around" which at best is a pain.
All I wanted was under "Edit Tasks" is a field with Progress where you select from a drop down list 10-25-50-75-Completed.
Thunderbird tasks has a lovely example of progress and of editing a task. One of the best I have seen.
I like your multi-platform. Now for a iPad version (Not that important)
You can color-code labels to make each status more distinguishable and quickly add labels using the auto-complete option as you start typing the label name.
